On the 16th January, Yasmeen from JTI sushi cam to campus to hold a sushi tasting event in the main entrance area of the Charles Sikes Building.
Following on from a fantastic event which generated lots of student and staff interest as well as a huge amount of positive feedback, the JTI sushi products are now available for sale at outlets across the campus. There are plenty of vegan options to choose from within the JTI product range that we stock.
Student Work Placements in partnership with Kirklees College
Throughout February we have eight placement students from Kirklees College working within the catering department. The students have rotated between back of house operations and front of house customer service duties. The students have now completed their work placements and we wish them every luck as they complete their studies.
Fairtrade Fortnight is a two week event where organisations show support for farmers and workers who grow our food in developing countries. Throughout Fairtrade Fortnight (26th February – 11th March) we had an increased range of Fairtrade produce available across our outlets including home baked banana and tea loaves for sale in our coffee outlets. Sam Debenham, Coffee Brand Supervisor produced baskets full of Fairtrade goodies for office based staff to purchase through use of an honesty box. Choosing Fairtrade is a simple way to make a difference to the lives of people who grow the things that we love.
TUCO Competition Entries
Our in house culinary team are competing in no less than 9 categories at this year’s TUCO University Catering Competitions!!! The competition is being held at Warwick University week commencing 26th March… Wish us luck!!!
Education and Development
Adrian Amour (Sous Chef) and Julie Rogers (Hospitality Supervisor) recently attended a two day Level 3 Allergen Management for Caterers course to grow their knowledge of best practice allergen management and to share their learning with the rest of the catering team on return. Adrian Armour described the course as: “Extremely informative course with clear guidance on how we can further improve our allergen management and awareness locally, I look forward to sharing my learning with the rest of the catering team”.
In the near future, Mark Vaughn, Chef de Partie will be attending a masterclass in Vietnamese Cookery presented by Wyn Ma, a top Vietnamese Chef and owner of two critically acclaimed restaurants in London. The course will showcase dishes that can be recreated on campus to delight students, staff and conference guests. With the British Council reporting that the number of Vietnamese people studying in the UK is growing by 20% year on year it is likely that we will start to see a surge in demand for Vietnamese cuisine on campus.
International Week 2018
Throughout International week, despite the snow, we had some special catering events taking place!
Middle Eastern and Vegan food sampling
In partnership with Bidfood, we held a tasting event on Tuesday 27th February. Bidfood Developmental Chef Craig Cooked up a variety of tasty treats for students and staff to sample and give feedback to help us shape our menus in the future. Dishes included: Lamb Kibbehs on a bed spiced giant couscous, Jack Fruit in Louisiana BBQ sauce, Mock Duck in Hoisin Sauce and Falafel bites with quinoa and roasted vegetables.
We received excellent feedback on the dishes with staff and students commenting:
“Extremely tasty & love that it’s vegan”, “Nice texture and lots of flavour” and simply: “Brilliant”. We look forward to working the new dishes into our menu offer.
Dough Making Workshop
Head Chef Lee Allsup teamed up with the Student’s Union to deliver a dough making workshop. Lee taught the students and staff that took part how to roll the ultimate pizza base, it turns out that student president Wael Alenzi was quite a natural, helped along by his pizza making dance moves!

The Awards evening is being held on 5th April 2018 so please keep your fingers crossed for us :).
Mr Lee’s Noodle Kiosk – Autumn 2018
We are introducing a state-of-the-art, interactive Noodle Kiosk, providing piping hot, freshly made, tasty and healthy noodle pots to our hungry customers 24 hours a day! The noodle kiosk will be located on Student Central Level 4 – follow Huddersfood on social media or watch this space for updates.

There will be a brand new coffee outlet in Joseph Priestley when the building reopens in Autumn 2018. We will be serving freshly ground coffee and a range of grab and go items. Come and take a peek when the building reopens.
